- Besan/ gram flour 1cup
- Salt ½ tsp
- Sugar 1tbsp
- Lemon juice 2tbsp
- Water ¾ cup
- Green chilies chopped 1tsp
- Ginger grated 1tsp
- Eno fruit salt 1tsp
- Oil 2tbsp
- (Baking powder 1tsp with Baking soda ½ tsp) my choice
- For tempering:-
- Oil 1tbsp
- Water ¼ cup
- Mustard seeds ½ tsp
- White sesame seeds 1tsp
- Green chili slice 1
- Lime juice 1tbsp
- Sugar ¼ cup
- Salt ¼ tsp
- Fresh scraped coconut
Besan Dhokla Process of Cooking Method:-
Bring a bowl add besan, salt, lemon juice, sugar, green chili, ginger, oil with help the water little by little mix it till without lumps & smooth thick batter.
Lastly add the eno power or (baking powder with baking soda) mix it & quickly transfer in the batter to a greased a steamer pan.
Place the batter tin in a steamer or a cooker with water which would be boiling in high flame & cover it.
Steam it for 2-3 minutes in high flame then turn the flame in to medium & steam it for 15-20 minutes.
Check with knife, if the batter doesn’t stick on the knife it is perfect.
Keep aside allow the cool.
Heat the oil in a pan, & put mustard seed is cracking put sesame seed, green chili stir it few minute.
After put the mix (water, lemon juice, sugar with salt) & stir it well.
Switch off the gas & spared the mixture on the dhokla evenly.
Take the dhokal cut into pieces & dhokal is ready to serve.
I use baking powder with baking soda in dhokal.
Tip:-
When using pressure cooker, remove the vent weight from the lid and cover the cooker tightly.
